Core Wine Company is named for the core — the essential center of something, the nucleus around which everything else organizes, the thing that remains when everything unnecessary has been stripped away. Applied to wine, the name declares a winemaking philosophy of distillation: getting to the core of the Paso Robles terroir, removing everything that isn't essential to the expression, making wine that is fundamentally and only what the vineyard requires.
The downtown Paso Robles tasting room produces Grenache, Syrah, and Cabernet Sauvignon from El Pomar District and broader Central Coast vineyard sources with the essential-center philosophy the name implies. Nothing added that isn't necessary; nothing removed that belongs.
