Ferro Cellars is named for ferro — Italian for 'iron,' the metallic element whose presence in the calcareous limestone soils of the Adelaida District contributes the characteristic mineral structure that distinguishes west-side Paso Robles wines from the more immediately approachable east-side expressions. Iron in limestone creates a specific mineral signature: taut, structured, requiring patience.
The Adelaida District boutique produces Grenache and Syrah from calcareous limestone vineyard sources selected for their mineral complexity and the iron-influenced structure that the ferro name declares. The winemaking approach is restrained — allowing the iron-limestone mineral character to emerge without obscuring it with extraction or new oak.
The appointment-only format keeps the mineral philosophy focused and the iron-in-the-earth conversation present in every tasting.
