About Paul Lato Wines
Paul Lato's story is one of wine's great romances: a Polish-born sommelier who arrived with little, worked cellars by day and dreams by night, and built a tiny Santa Maria-based label whose Pinot Noir, Chardonnay and Syrah from the Central Coast's greatest vineyards now command cult devotion and critic scores in the high 90s. Poetic wine names, Belle de Jour, Il Padrino, match the craft.
Production stays small and allocated, the wines opulent yet precise. Proof that conviction still writes careers in California.
