Paul Lato — a Polish-born sommelier who moved to California, taught himself winemaking, and built a reputation as one of the Central Coast's most gifted interpreters of Pinot Noir — places his surname directly on wines from Bien Nacido Vineyard, Dierberg Vineyard, and other top Santa Barbara County sites.
Lato's Pinot Noir wines are named for individual characters and references — Le Souvenir, Il Padrino, Cinematica — each exploring a different facet of what Santa Maria Valley and Santa Ynez Valley Pinot Noir can achieve with the right site and the right handling. His Chardonnay from Bien Nacido demonstrates the same precision applied to white wine.
