Residual Wines takes its name from the winemaking term residual sugar — the natural grape sugar that remains in wine after fermentation, neither converted to alcohol nor completely absent. The residual is what's left after the primary process: the remainder, the trace, the lasting mark that the grape's original sweetness leaves even in dry wines. Applied as a brand philosophy, residual declares wine that carries the trace of everything that happened to it — vineyard, vintage, fermentation — the residual marks of all its transformations preserved in the bottle. The micro boutique produces Pinot Noir and Chardonnay from contracted Russian River Valley vineyard sources.
