Sassafras Springs sits within the Ozark Mountain AVA, a sprawling appellation established in 1986 that spans northwest Arkansas, southern Missouri, and northeast Oklahoma and ranks among the largest in the country. Because hot, humid summers make classic California varieties a struggle here, the winery cultivates hybrids suited to the environment, Chambourcin, Norton (also called Cynthiana), Opportunity, and Enchantment among them, and the wines tend toward the sweeter side. General manager Drew Gorton also serves on the board of the Arkansas Association of Grape Growers, which runs an annual competition for wines made with at least 90 percent Arkansas-grown fruit.
