Calais Winery holds a singular distinction in Texas wine: it has earned the highest scores in the James Suckling Texas tasting report not once but twice in succession, making it the most critically acclaimed Texas winery by that measure. The boutique Hye operation focuses exclusively on Bordeaux varieties — Cabernet Sauvignon, Cabernet Franc, and Merlot — and draws grapes from some of the state's finest vineyard sources.
Winemaker and owner Steven Calais brings a philosophy shaped by his belief in diversity as Texas wine's greatest strength. Rather than chasing a single regional identity, Calais sources from Cathedral Mountain Vineyard, High Plains sites, and other premium Texas locations, letting each source speak in its own voice.
