About Le Cuvier Winery

Le Cuvier is one of Paso Robles' most characterful small wineries, in the Adelaida hills and long led by pioneer winemaker John Munch, an early and influential figure in the region. The winemaking is deliberately hands-off and non-interventionist: native-yeast fermentations, minimal additions, and a belief that wine is best when left largely to its own devices, producing distinctive, gutsy, terroir-driven wines from Rhone and other varieties.

The signature experience is a food-and-wine pairing, with a regularly changing menu built to show the wines at the table, an unusually thoughtful, hospitable format for a winery of this size. Quirky, personal, and focused on substance, Le Cuvier rewards curious drinkers looking for something well off the beaten path.

Le Cuvier is the newest of just six Regenerative Organic Certified wineries in Paso Robles - the highest concentration of ROC estates anywhere in the world (only 22 exist globally) - for winemaker Clay Selkirk, soil health became a gateway to rethinking the whole dry-farmed, minimal-intervention system.

Bill and SharonBill and Sharon Sheffer named their Adelaide Road estate in the Adelaida District after the French 'cuvier', the vat room where grapes are fermented in French winemaking tradition. They established the winery in 1984 and still run it themselves, a warm, family-conducted Paso Robles Rhône and Bordeaux stop open daily for walk-ins.
✓
The Le CuvierThe name Le Cuvier points straight at the French vat room, declaring that the wines follow French winemaking process and that the estate is as committed to both Rhône and Bordeaux quality as any west-side Paso Robles producer. The result is a warm, Sheffer-family-run walk-in boutique in the Adelaida District.
