Le Cuvier is one of Paso Robles' most characterful small wineries, in the Adelaida hills and long led by pioneer winemaker John Munch, an early and influential figure in the region. The winemaking is deliberately hands-off and non-interventionist: native-yeast fermentations, minimal additions, and a belief that wine is best when left largely to its own devices, producing distinctive, gutsy, terroir-driven wines from Rhone and other varieties.
