About Tolo Cellars
Way out Adelaida Road, in a little red farmhouse built in the 1880s, Tolo Cellars pours some of the west side's most character-driven wines. Proprietor Josh Gibson learned his craft as assistant winemaker at neighboring Le Cuvier, the Far Out Wineries' spiritual home, and opened his own tasting room in December 2005, committing to native-yeast ferments that let each rustic hillside vineyard, in his words, express its own flora and fauna. Production stays around 1,200 cases across a shape-shifting list, Zinfandel, Sangiovese and the Asini Zin-Sangiovese blend, Tempranillo, Barbera, Mourvedre and Rhone blends, ten to fourteen wines a year.
Josh and his wife Michele run the farmhouse themselves, Thursday through Sunday, with resident cats and rescue animals patrolling the country-garden grounds and Provencal linens sharing shelf space with bottles. Visitors regularly call it the highlight of their trip precisely because it barely appears on the maps: far-out Adelaida hospitality at its most genuine, on the winding road between Le Cuvier and Tablas Creek.
