Waltz is Lancaster County’s Bordeaux specialist: founded by Jan and Kimberly Waltz and now led by son Zach on the sixth-generation Manheim farm, with Merlot, Cabernet Sauvignon, and Sauvignon Blanc grown in limestone-rich soils. Philadelphia wine buyers say the varietally precise wines go toe to toe with good Bordeaux - the Merlot and Sauvignon Blanc especially - poured in a polished tasting room with local pretzels and chocolate on the cheese boards, or on the lawn against the farm backdrop.
