AmByth, Welsh for forever, is the Templeton-area estate of Welshman Phillip Hart and Mary Morwood Hart, and it holds a singular distinction: it was among the first biodynamically farmed wineries in the Paso Robles region, farming its hillside vines entirely dry, without irrigation, on a 20-acre vineyard within a larger holistic ranch of olives, livestock and bee hives.
The wines are made as naturally as the farming: native fermentations, minimal additions, often skin-fermented whites and amphora experiments, in tiny quantities that sell largely to a devoted following.
