About Cayucos Cellars
Cayucos Cellars is the quintessential small family winery: owned and operated by the Selkirk family of five since 1996, with no other staff, so the person pouring your flight is family. The winery itself hides in an old dairy barn on a working ranch in the coastal hills above Cayucos; the tasting room sits in downtown Cambria, a few minutes up Highway 1.
The winemaking is deliberately old-school. Everything ferments on wild yeast alone, ages three to six years in neutral oak, and goes to bottle without filtering or fining, with annual production of only 500 to 800 cases. The room runs first come, first served, and the family's dogs-welcome, good-chat hospitality is part of the draw.
