About Desparada Wines
Vailia From arrived in Paso Robles in 2007 living out of a home on wheels, parked it in one of the area's early biodynamic vineyards, and set to work; Desparada, founded in 2009, is the chronicle of what she calls a traveler's path through nearly three decades of wine work spanning harvests, restaurant floors, importing and brokerage. The label became one of Tin City's defining addresses, where From ferments and ages in terra cotta amphorae, ancient vessels turned thoroughly modern in her hands, across Sauvignon Blanc, Bordeaux and Italian-variety reds drawn from more than twenty top Central Coast vineyards.
The wines are the corrective to natural wine's flaky reputation: clean, deliberate and site-expressive, with whites that hold real acidity through Paso summers, earning Jeb Dunnuck's up-and-coming-star praise for depth that stays pure and classy. Tastings at 3060 Limestone Way are intimate, seated 45-minute affairs by appointment, occasionally supervised by the resident tortoise, with poetic tasting notes that trade pH jargon for feeling. Desparada is female-owned Tin City at its most compelling: unbound by style, anchored by craft.
