Dover Canyon Winery is named for the canyon on Dan and Mary Panico's Adelaida District property — a geographic feature that became the estate's identity when the Panicos established the winery in 1998. The name is direct and personal: this is where the winery sits, in this specific Adelaida District canyon.
Dan Panico has been farming the Peachy Canyon Road estate for more than two decades, developing a deep understanding of the calcareous limestone soils and the marine air corridor's influence on the estate's Grenache, Syrah, Zinfandel, and Cabernet Sauvignon. The farming philosophy is hands-on and personally committed — the canyon-named estate reflects the reality that Dan Panico is in these vineyards daily.
The weekend walk-in tasting room is family-welcoming and dog-friendly, consistent with a family winery where the owners are present and personally invested in every visitor's experience.
