Quivet Cellars is named for the quality of quietude — the French quiétude, the condition of stillness and tranquility that allows subtle things to be perceived. Applied to wine, the name declares a winemaking philosophy of restraint: wines that don't announce themselves loudly, that reward the still and attentive palate, that deepen in the glass rather than impressing immediately.
The Coombsville estate in the southeastern Napa Valley produces Cabernet Sauvignon from the appellation's distinctive volcanic soils and marine-cooled growing environment — wines with the naturally lower alcohol and higher natural acidity that Coombsville's cooler temperatures facilitate. The quiet philosophy is supported by the terroir: Coombsville Cabernet is inherently more restrained than warmer valley-floor expressions.
