About Valette Wines
Valette Wines is the wine label of Dustin Valette, one of Healdsburg's most celebrated chefs, and it reflects the same food-and-wine artistry that made his restaurant famous. A fourth-generation Sonoma County native who trained at the Culinary Institute of America and Michelin-starred kitchens including Thomas Keller's Bouchon, Valette opened his acclaimed restaurant in 2015 in the historic building where his great-grandfather once ran a French bakery.
For the wine label, he collaborates with some of the top winemakers in Sonoma and Napa to craft a portfolio built for the table, Sauvignon Blanc, Chardonnay, Pinot Noir, rose, Champagne made in France, and Cabernet Sauvignon that has earned back-to-back 100-point scores. The whole idea is to marry culinary artistry with the glass.
The Valette experience does exactly that: tastings pair the wines with house-made charcuterie and artisan cheeses, and a new downtown Healdsburg wine lounge, sharing a wall with the original restaurant, reimagines the tasting room through curated food-and-wine pairings.
