About Bodega de Edgar
Bodega de Edgar is a personal, family-owned Paso Robles winery built around Spanish varieties, founded by winemaker Edgar Torres. Born in Mexico and raised on the Central Coast in Cayucos, Torres saw his heritage mirrored in Paso's rolling hills, Mediterranean climate, and varied soils, and named the winery for the Spanish word for a wine cellar. The focus is small-lot Iberian grapes, Albarino, Tempranillo, Garnacha, Carignan, and Mourvedre, made with restraint and a strong sense of place.
Tastings are a warm, family-run experience, offered inside the cellar or out on the patio, with reservations suggested but walk-ins and kids welcome. It is an easygoing, personal stop, and a rare chance to explore serious Spanish varieties in the middle of Paso's Rhone and Bordeaux country.
