Dark Star Cellars is named for the astronomical concept of a dark star — a stellar body that generates enormous energy but emits relatively little visible light, powerful and present but not immediately obvious. The wine philosophy follows the same principle: Cabernet Sauvignon and Syrah with genuine depth and power that reveals itself gradually to those who pay attention, rather than announcing itself immediately with extracted fruit.
The Anderson Road estate in El Pomar District has been producing Cabernet Sauvignon, Syrah, and Zinfandel since 2000, building a following among Paso Robles enthusiasts who appreciate the estate's commitment to structural wines that reward cellaring.
