Shypoke Cellars takes its name from an old American vernacular term for the great blue heron, a shypoke, as the bird was called in folk speech, for its shy, stealthy quality at the water's edge, waiting with infinite patience for the right moment to strike. The winery's founding philosophy is that winemaking requires exactly this quality: patient observation, precise timing, and the willingness to wait for exactly the right moment rather than forcing an outcome.
The Napa Valley Cabernet Sauvignon program reflects this philosophy through unhurried winemaking: extended hang time where the vintage allows, patient barrel aging, and a restrained extraction philosophy that prioritizes elegance over immediate impact.
