Varaison Vineyards and Winery sits in the heart of Palisade in a Victorian-era estate, its winery rebuilt in 2006 from a historic lumber-company barn moved to the site and transformed into a 5,800-square-foot facility. The family-run label is devoted to old-world styles that preserve the past for the future.
Varaison's philosophy is unusual: single varietal, single vineyard, single vintage, with no blending, so each wine expresses one grape as fully as possible. The estate-bottled lineup runs to Reserve Merlot, Chardonnay, Orange Muscat, and a Methode Charmat sparkling, poured in a Victorian tasting room with an expansive entertainment space. Guests are invited to tour the adjacent formal David Austin rose garden, home to some 1,500 fragrant Old English roses.
