About Wedell Cellars
Wedell Cellars is John Wedell's personal wine project — his surname placed on Chardonnay and Pinot Noir sourced from the coolest available Central Coast vineyard sites, demonstrating that Paso Robles' reputation for warm-climate wine doesn't capture the full range of what the region's maritime-influenced sub-zones can produce.
John Wedell's focus on Edna Valley and Sta. Rita Hills Chardonnay and Pinot Noir is a deliberate counter-argument: the Central Coast's cool maritime sub-zones produce white and red wines of finesse and structure that rival their Burgundian reference points more closely than most California wine regions. The surname-eponymous approach means Wedell's name is the argument — his judgment, his sites, his winemaking.
The appointment-only format keeps the scale personal and the relationship between Wedell and his visitors genuinely engaged.
