About Paoletti Estates Winery
Paoletti Estates Winery sits at 4501 Silverado Trail in Calistoga, within the Calistoga AVA. Founder Gianni Paoletti, born in Venice and trained as a chef from age 16 before immigrating to the U.S. in 1964 and later founding the well-known Ristorante Peppone in Los Angeles, purchased the property in 1989; the estate released its inaugural vintage in 1994.
The winery farms three vineyards totaling 32 acres and produces roughly 3,000-3,500 cases a year, with a focus on Bordeaux and Italian red varieties. It is notable for planting Nero d'Avola, a Sicilian variety found nowhere else in Napa Valley, alongside a White Malbec and a 100% varietal Malbec. Visits are by appointment only (10am-5pm); there are no regular public tours.
Paoletti farms the only Nero d'Avola planting in Napa Valley, aged in a cave lined with 60 Carrara marble sculptures.
