About Sauvage Spectrum

Sauvage Spectrum is a collaboration between a grape grower and a winemaker on Colorado's Western Slope, farming 60 estate acres in Palisade. Co-founder Patric Matysiewski and the team hand-harvest 26 varietals and vinify with minimal cellar interference to express the valley's high-desert terroir.

The name captures a juxtaposition, the wild and untamable side of grape growing meeting the artisan craft of winemaking. Sauvage Spectrum has become a Grand Valley destination for bubbles, producing Colorado grower sparkling wines and pet-nats alongside skin-contact whites, reds, and piquette, many of them low- or no-sulfite. Soil, abundant sunshine, high altitude, and fresh snowmelt all shape the finished wines, which are poured right in the production area.
