The collective model reflects a genuine creative and philosophical community within Paso Robles, producers who share a commitment to alternative varieties, minimal intervention, and genuine terroir expression rather than the mainstream Bordeaux and Rhône varietals that dominate the region's commercial tier. Walk-ins are welcome daily from 11am to 5pm with a $15 tasting fee, making the Underground one of the most affordable and intellectually stimulating tasting experiences in the Paso Robles area.
